Garlicky Ginger Haricots Verts

Haricots verts aka french beans aka skinny green beans are often forgotten (at least in my home) but wow, when I remember them, they are always a favorite. There was a time, growing up, where the ONLY vegetable I liked was haricot verts. While I’m glad my taste buds adjusted to new vegetables and flavors, I do love coming back to my high school favorite. They are just so simple, refreshing, and can take on any flavor.

This recipe is a perfect side dish to chicken, fish, beef, really anything. It’ll take you no more than 15 minutes to prepare and the ingredient list is SHORT! These beans are quickly blanched and then sautéed in butter, garlic, and ginger.

Ingredients:

1 12 oz bag of haricot verts
1 tbsp extra virgin olive oil
2 tbsp grass-fed butter
2 inches minced ginger
4 garlic cloves, minced
Maldon flaky salt (any salt will work here)

Instructions:

1. Bring a pot of salted water to a boil, and fill a large bowl with ice water. Add green beans to the boiling water and let cook for 3-5 minutes, until they become bright green, slightly tender on the inside and crisp on the outside
2. When done, place green beans into the ice water to stop the cooking. Lift out off the ice water once cool and place them on a towel
3. Next, heat a large skillet over medium high heat. Add 1 tbsp extra virgin olive oil, 1 tbsp of butter, and green beans. Cook, stirring continuously for 5-10 minutes or to your desired doneness. Once almost finished, add in the garlic and ginger and cook for another 1-2 minutes, until fragrant
4. Top with flaky salt and serve as a side
