Crispy Breakfast Tacos
CRISPY BREAKFAST TACOS

Breakfast tacos can be healthy and delicious…and who doesn't love tacos? Flame burning a tortilla is now the ONLY way I am interested in making tacos. Once you try this you won't want to go back. Not to mention the combo of these flavors is really delicious.
INGREDIENTS:
4 grain free tortillas (I like the brand siete almond or cassava flour tortillas)
1-2 tbsp extra virgin olive oil
1/4 cherry tomatoes chopped
1/4 cup yellow onion chopped
1 cup of spinach chopped
4 pasture raised eggs
Salt
Garlic powder
Pepper
Hot sauce (I used franks, but use your favorite!)
INSTRUCTIONS:
1. Heat a large nonstick skillet to medium heat and add in 1 tbsp of olive oil. Add in onions and tomatoes and cook until tomatoes are slightly charred and onions are browning (see notes below on tortillas and you can work on that while the veggies cook)
2. Add salt, garlic powder and pepper to the veggies
3. Add spinach to the pan and cook for about 30 seconds or until cooked down
3. Turn your burner back onto high heat. While the stove is heating, whisk your eggs and add salt
4. Add 1 tbsp of oil to the pan and let oil get HOT
5. Add eggs to the hot pan. Let the eggs sit for a few seconds (about 5), turn the heat off and continually push the eggs towards the center of the pan until cooked to your liking
6. Serve up the tortillas with eggs, veggies and your favorite hot sauce.
TORTILLAS:
While the veggies are cooking you can start making the tortillas.
Gas stove: Fire up the burners on your stove to the lowest setting. One at a time, carefully place a tortilla directly on the burner and flip after about 45 seconds. As you finish cooking the tortillas, place them onto a towel and close the towel up to steam the tortillas and keep them warm.
Electric stove: Place the tortillas in a dry (no oil) stainless steel skillet over medium heat and cook them for about 30 seconds on each side.
